Recipe: Strawberry Nutella Cheesecake

It’s been a while since I’ve posted a recipe here, since I’ve been using Instagram to do that more. Follow me there: FeministaJones :)

You guys know how much I LOVE Nutella, and I got the baking bug. Weird, because I don’t bake, at least not pastries. I don’t have enough of a sweet tooth to want to bake regularly. In any event, I felt compelled to make some kind of dessert with Nutella and I decided upon cheesecake. Weird again, because I don’t really care for cheesecake as a rule LOL. I borrowed some elements of the cheesecake recipe that came with the pie crust and tweaked it because I wanted Nutella and fresh berries to be involved.

Here you go

Ingredients:

  • Nutella (You’ll use about 1.5 cups altogether)
  • Strawberry Preserves (1 cup)
  • 1/4 cup lemon juice (not from concentrate)
  • 1 can of sweetened condensed milk (14oz)
  • Chocolate ready made pie crust
  • 1 package of cream cheese (8oz) soften in microwave for 20 seconds
  • 1 organic egg (I always advocate organic when possible)
  • Fresh strawberries, sliced thin

Using an electric hand mixer (low), whip softened cream cheese until it begins to get fluffy

Slowly add entire amount of sweetened condensed milk

Add 3 tblspns of the lemon juice, the egg, and 1/2 cup of Nutella.

Blend until all contents are evenly mixed and have a brown tint

Pour half of the mixture into the pie crust

In a separate bowl, mix strawberry preserves and the remaining lemon juice until well blended

Add strawberry preserve mixture atop the mixture

Pour remaining mixture into pie crust, atop the strawberry preserve mixture. With a knife, swirl the mixture in the pie to blend the preserves in

Preheat your oven to 300 degrees at this point

Slice your strawberries, maybe about 7 or 8 large ones

Arrange strawberry slices around the edges. You can fill the entire surface if you want. Totally up to you!

Place cheesecake into oven for 55 minutes on 300 degrees. In higher altitudes, it might take longer. You just want to make sure the center has set and it solid.

 

This is what it looks like when removed from the oven. You can leave it like this. Let it cool for an hour before refrigerating for at least 3 hours.

OR

You can add more Nutella!!

I made some silly lines with the Nutella. You can use a baker’s bag, one of those joints with the points at the end OR you can put Nutella in a ziploc bag and snip the corner which will let you squeeze out a small amount. Put into the fridge and let it get solid.

Voila!

    In the interest of sharing, and love of all things Nutella, I’ll offer up this other devious recipe sent to me by a friend…3-Ingredient Nutella Brownies…stuff like this should be illegal! :-D
